A comforting apple cake with cinnamon-spiced apples and a buttery streusel topping.

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 2 cups apples, peeled and diced
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup brown sugar
- 1/2 cup oats
- 1/4 cup all-purpose flour (for streusel)
- 1/4 cup butter (for streusel)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a bowl, cream together butter and sugar. Beat in eggs one at a time, then stir in the milk.
- In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt. Gradually stir into the creamed mixture until just blended.
- Fold in diced apples. Pour batter into the prepared baking dish.
- To make the streusel, mix together oats, brown sugar, 1/4 cup flour, and 1/4 cup butter until crumbly. Sprinkle over the top of the batter.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving.

Store in an airtight container for up to 3 days at room temperature or refrigerate it for up to a week.
