- 2 lbs beef chuck, cut into cubes
- 4 cups beef broth
- 3 medium carrots, sliced
- 3 medium potatoes, diced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- 2 teaspoons dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the beef cubes and brown them on all sides.
- Stir in the onion and garlic; cook until softened.
- Add the carrots, potatoes, tomato paste, thyme, bay leaf, salt, and pepper.
- Pour in the beef broth and bring to a boil.
- Reduce heat to low, cover, and let simmer for 90 to 120 minutes until the beef is tender.
- Remove the bay leaf before serving. Enjoy your hearty beef stew!

Serve hot in bowls with crusty bread on the side. Add fresh parsley for color.
