Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 4 cups beef broth
  • 3 medium carrots, sliced
  • 3 medium potatoes, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the beef cubes and brown them on all sides.
  3. Stir in the onion and garlic; cook until softened.
  4. Add the carrots, potatoes, tomato paste, thyme, bay leaf, salt, and pepper.
  5. Pour in the beef broth and bring to a boil.
  6. Reduce heat to low, cover, and let simmer for 90 to 120 minutes until the beef is tender.
  7. Remove the bay leaf before serving. Enjoy your hearty beef stew!
