Easy Chicken Bacon Ranch Quesadilla

Description

A quick and delicious quesadilla filled with chicken, bacon, and ranch dressing, perfect for busy days.


Ingredients

  • 4 large flour tortillas
  • 2 cups cooked chicken (shredded)
  • 8 slices bacon (cooked and crumbled)
  • 2 cups Mexican cheese blend (shredded)
  • 1/2 cup ranch dressing
  • 1 cup tomatoes (diced)
  • 1/4 cup red onion (finely chopped)
  • 2 tbsp fresh cilantro (chopped)
  • 2 tbsp butter (for cooking)

Instructions

  1. Mix the shredded chicken with ranch dressing in a bowl.
  2. Add crumbled bacon, diced tomatoes, finely chopped red onion, and chopped cilantro to the chicken mixture. Stir well.
  3. Layer one tortilla with a handful of shredded cheese, add a portion of the chicken mixture, and sprinkle more cheese over the top.
  4. Fold the tortilla in half to cover the filling.
  5. Heat a skillet over medium heat and add butter to melt.
  6. Place the folded quesadilla in the skillet. Cook for 2-3 minutes on one side until golden brown, then flip and cook for another 2-3 minutes.
  7. Remove from the skillet and cut into wedges to serve.

Notes

Serve warm with extra ranch dressing, salsa, guacamole, or sour cream. Works well as a quick lunch, snack, or dinner.
