Description

A quick and tasty meal combining tender chicken, crispy bacon, and creamy ranch dressing with cheese, all wrapped in a golden tortilla. Perfect for busy days or casual gatherings.


Ingredients

  • 4 large flour tortillas
  • 2 cups cooked chicken (shredded)
  • 8 slices bacon (cooked and crumbled)
  • 2 cups Mexican cheese blend (shredded)
  • 1/2 cup ranch dressing
  • 1 cup tomatoes (diced)
  • 1/4 cup red onion (finely chopped)
  • 2 tbsp fresh cilantro (chopped)
  • 2 tbsp butter (for cooking)

Instructions

  1. In a bowl, mix the shredded chicken with ranch dressing until well coated.
  2. Stir in the crumbled bacon, diced tomatoes, chopped onion, and cilantro.
  3. Take a tortilla and layer it with a handful of cheese.
  4. Add a portion of the chicken mixture on top of the cheese, then sprinkle more cheese on top.
  5. Fold the tortilla in half to create a quesadilla.
  6. In a skillet, melt butter over medium heat.
  7. Place the quesadilla in the skillet and cook for 2-3 minutes on each side until golden brown and the cheese has melted.
  8. Repeat with the remaining tortillas and filling.

Notes

Serve warm with extra ranch dressing or your favorite salsa. Garnish with fresh cilantro.
