A quick and tasty meal combining tender chicken, crispy bacon, and creamy ranch dressing with cheese, all wrapped in a golden tortilla. Perfect for busy days or casual gatherings.

- 4 large flour tortillas
- 2 cups cooked chicken (shredded)
- 8 slices bacon (cooked and crumbled)
- 2 cups Mexican cheese blend (shredded)
- 1/2 cup ranch dressing
- 1 cup tomatoes (diced)
- 1/4 cup red onion (finely chopped)
- 2 tbsp fresh cilantro (chopped)
- 2 tbsp butter (for cooking)
Instructions
- In a bowl, mix the shredded chicken with ranch dressing until well coated.
- Stir in the crumbled bacon, diced tomatoes, chopped onion, and cilantro.
- Take a tortilla and layer it with a handful of cheese.
- Add a portion of the chicken mixture on top of the cheese, then sprinkle more cheese on top.
- Fold the tortilla in half to create a quesadilla.
- In a skillet, melt butter over medium heat.
- Place the quesadilla in the skillet and cook for 2-3 minutes on each side until golden brown and the cheese has melted.
- Repeat with the remaining tortillas and filling.
Notes
Serve warm with extra ranch dressing or your favorite salsa. Garnish with fresh cilantro.
