  • 1 tablespoon olive oil

  • 2 cups full-fat cottage cheese

  • ⅛ teaspoon black pepper (for cottage cheese)
  • 1 ½ cups marinara sauce
  • 1 cup shredded part-skim mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)
  • Red pepper flakes for a little kick (optional)
  • Panko breadcrumbs for crunch (optional)

Instructions

  1. Pound each chicken breast between plastic wrap to about ½-inch thickness.
  2. Mix seasoning (garlic powder, onion powder, oregano, salt, black pepper) and rub it on chicken.
  3. Heat olive oil in a skillet over medium-high heat and sear chicken for 4-5 minutes on each side, until golden brown and cooked through.
  4. Let chicken rest for at least 5 minutes, then slice into strips or cubes.
  5. In a bowl, mix cottage cheese with garlic powder, salt, and black pepper.
  6. Preheat oven to 375°F (190°C) and coat bowls with cooking spray or olive oil.
  7. Divide marinara sauce among the bowls and create a base layer.
  8. Spoon cottage cheese mixture on top of marinara.
  9. Layer sliced chicken over the cottage cheese.
  10. Add another layer of marinara sauce over chicken.
  11. Top with shredded mozzarella and grated Parmesan cheese.
  12. Bake for 20-25 minutes until hot and bubbly.
  13. Let rest for 5-10 minutes before serving. Garnish with fresh basil if desired.

Notes

For a crunchier texture, sprinkle Panko breadcrumbs on top before baking. This dish can be customized with different toppings or served in individual ramekins for a personal touch.
