- 2 cups full-fat cottage cheese

- 1 ½ cups marinara sauce
- 1 cup shredded part-skim mozzarella cheese

- Panko breadcrumbs for crunch (optional)
Instructions
- Pound each chicken breast between plastic wrap to about ½-inch thickness.
- Mix seasoning (garlic powder, onion powder, oregano, salt, black pepper) and rub it on chicken.
- Heat olive oil in a skillet over medium-high heat and sear chicken for 4-5 minutes on each side, until golden brown and cooked through.
- Let chicken rest for at least 5 minutes, then slice into strips or cubes.
- In a bowl, mix cottage cheese with garlic powder, salt, and black pepper.
- Preheat oven to 375°F (190°C) and coat bowls with cooking spray or olive oil.
- Divide marinara sauce among the bowls and create a base layer.
- Spoon cottage cheese mixture on top of marinara.
- Layer sliced chicken over the cottage cheese.
- Add another layer of marinara sauce over chicken.
- Top with shredded mozzarella and grated Parmesan cheese.
- Bake for 20-25 minutes until hot and bubbly.
- Let rest for 5-10 minutes before serving. Garnish with fresh basil if desired.
Notes
For a crunchier texture, sprinkle Panko breadcrumbs on top before baking. This dish can be customized with different toppings or served in individual ramekins for a personal touch.
