- 1/2 cup freshly grated Parmesan cheese
- 2 cups baby spinach (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Cook whole wheat penne according to package instructions. Drain and set aside.
- In a frying pan, heat olive oil over medium heat. Sauté minced garlic until fragrant.
- Add cubed chicken to the pan and season with salt, black pepper, paprika, and Italian seasoning. Cook until browned.
- Sprinkle flour over the chicken and stir. Cook for 1 minute.
- Pour in chicken broth and milk, stirring until the sauce thickens.
- Add Greek yogurt and Parmesan cheese, stirring until the sauce is creamy.
- Add baby spinach and stir until wilted. Remove from heat.
