Ingredients

  • 2 cups heavy cream, cold
  • 3 egg yolks, room temperature
  • 1 1/4 cups powdered sugar, sifted
  • 2 1/4 cups mascarpone cheese
  • 1/2 cup eggnog
  • 40 gingerbread cookies
  • 1/2 cup coffee, cooled
  • 1 tsp rum extract

Instructions

  1. Pour the cold heavy cream into a chilled bowl and whip until soft peaks form, being careful not to overbeat.
  2. In a separate bowl, whisk the egg yolks and powdered sugar until smooth and glossy.
  3. Add the mascarpone and eggnog to the yolk mixture and mix until just combined.
  4. Gently fold the whipped cream into the mascarpone mixture.
  5. Quickly dip each gingerbread cookie in the coffee for just one second per side.
  6. Layer half of the dipped cookies in an even layer in your dish.
  7. Spread half of the cream mixture evenly over the cookie layer.
  8. Repeat with the remaining cookies and cream, finishing with a cream top.
  9. Chill for at least 4 hours in the fridge, preferably overnight.
  10. Slice carefully to serve and garnish with crushed gingerbread crumbs if desired.
