- 1 lb ground beef
- 4 medium potatoes, diced
- 3 carrots, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- Optional: 1 cup frozen peas or green beans
Instructions
- In a skillet, brown the ground beef over medium-high heat until no longer pink. Drain the excess fat.
- Transfer the browned beef to the crockpot.
- Add the diced potatoes, sliced carrots, chopped onion, and minced garlic to the crockpot.
- Pour in the beef broth and diced tomatoes, followed by thyme, rosemary, salt, and pepper.
- Stir to combine all the ingredients well.
- Cover and cook on low for 6-8 hours or on high for 4 hours.
- If using, stir in frozen peas or green beans in the last 30 minutes of cooking.
- Serve hot and enjoy!
Notes
To store, keep in an airtight container in the refrigerator for up to 4-5 days or freeze for up to 3 months. Let cool before freezing.
