- 1 cup chopped apples (about 1 medium apple)

- ¼ cup packed light brown sugar
- ¼ teaspoon ground cinnamon (for streusel)
- ¼ cup cold unsalted butter (for streusel)
Instructions
- Preheat the oven to 375°F (190°C) and line a 12-cup muffin pan with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
- In a separate medium bowl, whisk the egg, milk, melted butter, and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients and stir gently until just moistened.
- Fold in the chopped apples until combined.
- For the streusel, mix the flour, brown sugar, and cinnamon in a small bowl. Cut in the cold butter until it resembles coarse crumbs.
- Divide the batter evenly among the muffin cups.
- Sprinkle the streusel topping generously over each muffin.
- Bake for 18-22 minutes, or until a skewer inserted into the center comes out clean.
- Let the muffins cool for a few minutes in the pan before transferring to a wire rack.
