Description

A no-fuss casserole that combines creamy filling, tender chicken, and flaky biscuit topping for a comforting meal.


Ingredients

  • 3 cups cooked chicken, diced or shredded
  • 1/3 cup unsalted butter, melted
  • 1/3 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup whole milk
  • 1 cup frozen peas and carrots mix
  • 1/2 cup frozen corn kernels (optional)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 1/4 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • 1 (16.3-ounce) can refrigerated biscuit dough
  • 1/4 cup fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large bowl, whisk together the melted butter and flour until a smooth paste forms. Gradually whisk in chicken broth and whole milk until the mixture is smooth.
  3. Stir in the cooked chicken, frozen peas and carrots mix, frozen corn (if using), dried thyme, dried sage, garlic powder, salt, and black pepper. Mix until all ingredients are well combined.
  4. Pour the chicken and vegetable mixture into the prepared baking dish, spreading it evenly.
  5. Arrange the refrigerated biscuit dough on top of the filling, placing them close together to cover the entire surface.
  6. Bake for 25–30 minutes, or until the biscuits are golden brown and puffed, and the filling is bubbly around the edges.
  7. Remove from oven and let the casserole rest for 5–10 minutes before serving. Garnish with fresh chopped parsley if desired. Enjoy!

This casserole can be made ahead and refrigerated before baking. For variations, substitute gluten-free ingredients or use vegetables in place of chicken.
