1 1/2 cups graham cracker crumbs
1/4 cup butter, melted
2 cups cream cheese, softened
1 cup honey
1 cup sour cream
3 large eggs
2 tablespoons dried lavender buds
1 teaspoon vanilla extract

Instructions
Preheat the oven to 325°F (160°C).
Mix the graham cracker crumbs with melted butter until combined. Press into the bottom of a springform pan to form the crust.
In a large mixing bowl, beat the cream cheese until smooth. Gradually add honey and sour cream, mixing until well incorporated.
Add the eggs one at a time, mixing on low speed after each addition.
Stir in dried lavender, vanilla extract, and salt.
Pour the cream cheese mixture over the crust and smooth the top with a spatula.
Bake for 50-60 minutes until the center is set but slightly jiggly.
Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar.
Refrigerate for at least 4 hours, preferably overnight, before serving.
Optional: Garnish with fresh lavender sprigs and drizzle with honey before serving.
