Ingredients

  • 1 lb ground beef or Italian sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef or chicken broth
  • 2 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • 8 oz lasagna noodles, broken into bite-sized pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley, for garnish

Instructions

  1. In a large pot over medium heat, cook the ground beef or sausage with the chopped onion until browned, then drain excess fat.
  2. Add minced garlic and cook for 1 more minute.
  3. Stir in crushed tomatoes, broth, dried basil, oregano, salt, and pepper; bring to a gentle boil.
  4. Add broken lasagna noodles and lower heat; simmer for 10-12 minutes until noodles are tender.
  5. Remove from heat and stir in ricotta cheese until well combined.
  6. Ladle into bowls, garnish with mozzarella cheese and fresh herbs.
