Ingredients

- 1 lb ground beef or Italian sausage
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups beef or chicken broth
- 2 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper, to taste
- 8 oz lasagna noodles, broken into bite-sized pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil or parsley, for garnish
Instructions
- In a large pot over medium heat, cook the ground beef or sausage with the chopped onion until browned, then drain excess fat.
- Add minced garlic and cook for 1 more minute.
- Stir in crushed tomatoes, broth, dried basil, oregano, salt, and pepper; bring to a gentle boil.
- Add broken lasagna noodles and lower heat; simmer for 10-12 minutes until noodles are tender.
- Remove from heat and stir in ricotta cheese until well combined.
- Ladle into bowls, garnish with mozzarella cheese and fresh herbs.
Notes
This soup can be made ahead and stored in an airtight container for up to 3-4 days in the refrigerator. It also freezes well for up to 2 months.
