Ingredients

  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth

  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
  2. Add the carrots and diced potatoes, cooking for a few more minutes.
  3. Stir in the lentils, cumin, salt, and pepper.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat to low and let simmer for about 30-35 minutes, or until lentils and potatoes are tender.
  6. Adjust seasoning if necessary and serve hot. Garnish with fresh parsley.
