Description

A delicious and healthy low-carb chicken casserole that’s easy to prepare and packed with protein.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup cheddar cheese, shredded
  • 1 cup cream or Greek yogurt
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the shredded chicken, broccoli, cauliflower, and half of the cheddar cheese.
  3. In another bowl, whisk together the cream or Greek yogurt, eggs, garlic powder, onion powder, salt, and pepper.
  4. Pour the wet mixture over the chicken and vegetable mix. Stir well to combine.
  5. Transfer everything into a greased baking dish. Spread it evenly.
  6. Top the casserole with the remaining cheddar cheese.
  7. Bake in the preheated oven for about 25-30 minutes or until the cheese is melted and bubbly.
  8. Let it cool for a few minutes before serving.

Notes

Pair with a side salad for added veggies. Store leftovers in an airtight container for up to 3-4 days, or freeze for up to a month.
