A delicious and healthy low-carb chicken casserole that’s easy to prepare and packed with protein.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 cup cheddar cheese, shredded
- 1 cup cream or Greek yogurt
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the shredded chicken, broccoli, cauliflower, and half of the cheddar cheese.
- In another bowl, whisk together the cream or Greek yogurt, eggs, garlic powder, onion powder, salt, and pepper.
- Pour the wet mixture over the chicken and vegetable mix. Stir well to combine.
- Transfer everything into a greased baking dish. Spread it evenly.
- Top the casserole with the remaining cheddar cheese.
- Bake in the preheated oven for about 25-30 minutes or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
Pair with a side salad for added veggies. Store leftovers in an airtight container for up to 3-4 days, or freeze for up to a month.
