- 1 pound pre-cooked beef meatballs
- 8 oz pasta (penne or rotini)
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 1/2 cups chicken broth
- 2 tbsp Cajun seasoning
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large pot over medium-high heat and brown the meatballs on all sides for 3-4 minutes per side. Remove and set aside.
- Add chopped onion in the same pot and sauté until soft, about 3-5 minutes.
- Stir in minced garlic and Cajun seasoning; cook until fragrant, about 30-60 seconds.
- Pour in chicken broth and bring to a boil, then add pasta and return meatballs to the pot.
- Reduce heat to medium-low, cover, and simmer for 12-15 minutes, stirring every 2-3 minutes.
- Remove from heat and stir in heavy cream and Parmesan until smooth and creamy.
- Taste and adjust seasoning with salt and pepper. Serve immediately.
Notes
For a meat-free option, use plant-based meatballs or hearty vegetables. Ensure that the pasta remains submerged in liquid during cooking to avoid sticking.
