Ingredients

Scale
  • 2 cups granulated sugar

  • 1 teaspoon pure vanilla extract

  2. Place over medium heat, stirring constantly until a full rolling boil is reached (5 to 7 minutes).
  3. Once boiling, set a timer for 1 minute and continue stirring constantly.
  4. Remove from heat and stir in vanilla extract.
  5. Add peanut butter and stir until melted and smooth.
  6. Stir in quick-cooking oats until evenly coated.
  7. Line baking sheets with parchment paper and scoop cookie mounds onto sheets.
