Ingredients

  • 2 cups granulated sugar
  • ½ cup unsalted butter
  • ½ cup milk
  • 4 tablespoons unsweetened cocoa powder
  • ½ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 1 cup creamy peanut butter
  • 3 cups quick-cooking oats

Instructions

  1. In a large saucepan, combine sugar, butter, milk, cocoa powder, and salt. Whisk together.
  2. Heat over medium, stirring constantly until the mixture reaches a rolling boil (about 5-7 minutes).
  3. Boil for exactly one minute while stirring constantly.
  4. Remove from heat and stir in the vanilla extract.
  5. Add peanut butter and stir until melted and smooth.
  6. Quickly stir in the oats until fully coated.
  7. Line baking sheets with parchment paper.
  8. Scoop 1.5 to 2 tablespoon mounds onto prepared sheets.
  9. Let cookies set at room temperature for 30-60 minutes or refrigerate for 15-20 minutes.
