- 3 cups quick-cooking oats
Instructions
- In a large saucepan, combine sugar, butter, milk, cocoa powder, and salt. Whisk together.
- Heat over medium, stirring constantly until the mixture reaches a rolling boil (about 5-7 minutes).
- Boil for exactly one minute while stirring constantly.
- Remove from heat and stir in the vanilla extract.
- Add peanut butter and stir until melted and smooth.
- Quickly stir in the oats until fully coated.
- Line baking sheets with parchment paper.
- Scoop 1.5 to 2 tablespoon mounds onto prepared sheets.
- Let cookies set at room temperature for 30-60 minutes or refrigerate for 15-20 minutes.
