Ingredients

- 2 packs of ramen noodles
- 2 tablespoons of soy sauce
- 1 tablespoon of peanut butter
- 1 tablespoon of sesame oil
- 1 tablespoon of maple syrup
- 1 clove of garlic, minced
- 1 teaspoon of ginger, grated
- 2 cups of mixed vegetables (like bell peppers, carrots, and broccoli)
- Optional: chopped green onions and sesame seeds for topping
Instructions
- Cook the ramen noodles according to the package directions. Drain and set aside.
- In a bowl, mix together the soy sauce, peanut butter, sesame oil, maple syrup, minced garlic, and grated ginger. Stir until smooth.
- Heat a pan over medium heat and add the mixed vegetables. Sauté them for about 5-7 minutes until they are tender.
- Add the cooked ramen noodles to the pan with the vegetables. Pour the sauce over the noodles and mix everything well to coat.
- Cook for another 2 minutes, stirring frequently until everything is well combined and heated through.
- Serve hot, topped with green onions and sesame seeds if desired.
Notes
Feel free to adjust the sauce ingredients to taste and add proteins like tofu or chickpeas for a more filling meal.
