Ingredients

  • 2 packs of ramen noodles
  • 2 tablespoons of soy sauce
  • 1 tablespoon of peanut butter
  • 1 tablespoon of sesame oil
  • 1 tablespoon of maple syrup
  • 1 clove of garlic, minced
  • 1 teaspoon of ginger, grated
  • 2 cups of mixed vegetables (like bell peppers, carrots, and broccoli)
  • Optional: chopped green onions and sesame seeds for topping

Instructions

  1. Cook the ramen noodles according to the package directions. Drain and set aside.
  2. In a bowl, mix together the soy sauce, peanut butter, sesame oil, maple syrup, minced garlic, and grated ginger. Stir until smooth.
  3. Heat a pan over medium heat and add the mixed vegetables. Sauté them for about 5-7 minutes until they are tender.
  4. Add the cooked ramen noodles to the pan with the vegetables. Pour the sauce over the noodles and mix everything well to coat.
  5. Cook for another 2 minutes, stirring frequently until everything is well combined and heated through.
  6. Serve hot, topped with green onions and sesame seeds if desired.
