  • 6 tablespoons (⅓ cup) cornstarch
  • 50 ml (¼ cup) vegetable oil for frying
  • Salt and pepper to taste
  • 1 onion, thinly sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 6 tablespoons (⅓ cup) ketchup
  • 2 tablespoons cider vinegar
  • 6 tablespoons (⅓ cup) demerara or brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, grated
  • 432g (15¼ oz) tin pineapple pieces, drained (reserve the juice)

Instructions

  1. Season the diced chicken with salt and pepper and coat with cornstarch.
  2. Heat vegetable oil in a frying pan over medium-high heat and fry the chicken pieces until golden and crispy. Remove and set aside.
  3. In the same pan, sauté onion and bell peppers until tender-crisp. Add grated ginger and garlic, cooking until fragrant.
  4. Stir in ketchup, cider vinegar, brown sugar, soy sauce, and pineapple juice, bringing the mix to a slight simmer.
  5. Return the fried chicken and pineapple pieces to the pan, coating them in the sauce and heating through.
