Description

A quick and effortless sweet and sour meatball recipe that impresses without requiring much effort.


Ingredients

  • 26 ounce bag frozen homestyle beef meatballs
  • 1/2 cup packed light brown sugar
  • 1/2 cup apple cider vinegar
  • 1/3 cup ketchup
  • 1 tablespoon non-alcoholic Worcestershire sauce
  • 1 tablespoon low sodium soy sauce
  • 2 teaspoons minced garlic
  • 2 tablespoons butter
  • 1 medium red bell pepper, cut into 1 inch pieces
  • 1 medium green bell pepper, cut into 1 inch pieces
  • 1 cup yellow onion, cut into 1 inch pieces
  • 2 tablespoons cornstarch
  • 1 cup pineapple chunks in 100% juice
  • Cooked white rice, brown rice, or noodles for serving
  • Toasted sesame seeds for garnish
  • Sliced green onions for garnish

Instructions

  1. Dice the red bell pepper, green bell pepper, and yellow onion into 1 inch pieces. Mince the garlic.
  2. In a large skillet, melt the butter over medium heat. Add diced bell peppers and yellow onion and sauté for 5 to 7 minutes until tender crisp. Add minced garlic and cook for another minute until fragrant.
  3. Remove the sautéed vegetables from the skillet. In the same skillet, add the frozen beef meatballs and brown them on all sides over medium-high heat. Remove and set aside.
  4. In a medium bowl, whisk together brown sugar, apple cider vinegar, ketchup, Worcestershire sauce, and soy sauce.
  5. In a separate small bowl, whisk cornstarch with reserved pineapple juice until smooth.
  6. Return sautéed vegetables to the skillet, pour in the sauce mixture, and bring to a simmer. Slowly stir in cornstarch slurry until the sauce thickens.
  7. Gently return meatballs to the skillet, add pineapple chunks, and stir to coat.
  8. Reduce heat to low, cover, and let simmer for 15 to 20 minutes.
  9. Taste sauce and adjust for sweetness or tanginess. Serve over rice or noodles, garnished with sesame seeds and green onions.

Notes

Can be made ahead and reheated. Perfect for weeknights or impressing guests.
