Ingredients

  • 34 boneless skinless chicken breasts
  • 3 cloves fresh garlic
  • 1-inch piece of fresh ginger
  • 1 cup coconut milk
  • 4 cups low-sodium chicken broth
  • Juice of 1 lime
  • Bell peppers and carrots (to taste)
  • Low-sodium soy sauce

Instructions

  1. Chop the chicken into bite-sized pieces and mince the garlic and ginger.
  2. Heat oil in a large pot over medium heat. Sauté the minced garlic and ginger until fragrant, about 1 minute.
  3. Add the chicken pieces and cook until they are no longer pink, about 5 minutes.
  4. Pour in the chicken broth and coconut milk, stirring well.
  5. Add bell peppers and carrots and let it simmer for about 10 minutes until the vegetables are tender.
  6. Remove from heat, stir in lime juice and soy sauce before serving.

Notes

For added flavor, top with fresh herbs like cilantro or green onions. Pairs well with jasmine rice.
