  • 1 pound lean ground turkey
  • 1 small green bell pepper, chopped
  • 1 (14 oz) can diced tomatoes with juices
  • 1 (14 oz) can pumpkin puree
  • 1 (14 oz) can white (cannellini) beans, drained
  • 1 (14 oz) can red kidney beans, drained
  • 2 tablespoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 cup chicken broth
  • Salt & pepper to taste
  • Garnish: Mexican cheese blend, cilantro, sour cream/Greek yogurt, avocado (optional)

Instructions

  1. Heat olive oil over medium heat in a large pot or Dutch oven. Sauté onion and garlic until translucent.
  2. Add ground turkey and cook until browned, breaking apart with a wooden spoon.
  3. Stir in chopped bell pepper and cook until softened.
  4. Add diced tomatoes, pumpkin puree, white beans, and red kidney beans; stir to combine.
  5. Sprinkle in chili powder, smoked paprika, cumin, dried oregano, and cayenne pepper.
  6. Pour in chicken broth, season with salt and pepper, and bring to a simmer.
  7. Reduce heat and cook for about 30 minutes, stirring occasionally to prevent sticking.
