Instructions
- In a large bowl, combine flour, sugar, baking powder, and salt.
- In another bowl, whisk together milk, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C).
- Drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan.
- Fry until golden brown, about 2-3 minutes on each side.
- Remove beignets and drain on paper towels.
- Dust with powdered sugar before serving. Enjoy warm!
