Ingredients

- 1/2 watermelon, cubed
- 1 cucumber, cubed
- Juice and zest of 2 limes
- 2 tablespoons extra virgin olive oil
- 1/4 teaspoon fine salt
- 3–4 tablespoons fresh basil, chopped
- 3–4 tablespoons fresh cilantro, chopped
- 1/3 cup (50g) feta cheese, crumbled
- Optional Add-Ins:
- Diced red onion
- Cubed avocado
- Fresh mint
- Cracked black pepper
Instructions
- Make the dressing: In a small bowl, whisk together lime juice, lime zest, olive oil, and salt until well combined.
- Prepare the salad: In a large bowl, add the cubed watermelon, cucumber, chopped basil, and cilantro.
- Assemble: Pour the dressing over the salad. Toss gently to coat the ingredients without breaking up the watermelon.
- Serve: Transfer to a serving platter or bowl. Top with crumbled feta and garnish with more herbs or optional add-ins as desired.
Notes
- Use chilled ingredients for extra refreshment.
- This salad is best enjoyed fresh the same day it’s made.
- Mint can be used instead of or in addition to basil/cilantro for a flavor twist.
