Instructions
- Preheat your oven to 350°F (175°C). Grease a muffin tin with olive oil or cooking spray.
- In a bowl, whisk together the eggs, salt, and pepper.
- Stir in the chopped spinach, feta cheese, and any additional ingredients like bell peppers or onion.
- Pour the egg mixture evenly into the muffin tin cups.
- Bake for 15-20 minutes, or until the muffins are set and slightly golden on top.
- Let cool for a few minutes, then remove from the tin. Serve warm or store in the fridge for meal prep.
