Description

Ingredients

  • 2 lbs beef stew meat
  • 4 cups apple cider
  • 4 medium potatoes, diced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
  • Mashed potatoes for serving

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the beef stew meat and brown on all sides.
  3. Add onion and garlic, sauté until softened.
  4. Stir in carrots, celery, potatoes, thyme, rosemary, salt, and pepper.
  5. Pour in the apple cider and bring to a boil.
  6. Reduce the heat to low, cover, and let it simmer for 90-120 minutes or until the beef is tender.
  7. Serve the stew over creamy mashed potatoes.

Notes
