- 2 lbs beef stew meat
- 4 cups apple cider
- 4 medium potatoes, diced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil

- 1 tsp rosemary
- Salt and pepper to taste
- Mashed potatoes for serving
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the beef stew meat and brown on all sides.
- Add onion and garlic, sauté until softened.
- Stir in carrots, celery, potatoes, thyme, rosemary, salt, and pepper.
- Pour in the apple cider and bring to a boil.
- Reduce the heat to low, cover, and let it simmer for 90-120 minutes or until the beef is tender.
- Serve the stew over creamy mashed potatoes.
Notes
Add a splash of apple cider vinegar or Dijon mustard for extra tang if the stew is too sweet. This stew is ideal for making ahead; flavors deepen overnight.
