- 1 cup plain Greek yogurt (unsweetened, full-fat or 2%)
- 2 large eggs
- 1/2 cup cocoa powder (unsweetened)
- 1/2 cup honey or maple syrup (or 1/3 cup coconut sugar)
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips (optional)
- Melted dark chocolate for drizzling (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper, lightly greased.
- In a medium mixing bowl, whisk together the Greek yogurt, eggs, honey (or alternative sweetener), and vanilla extract until smooth.
- Sift in the cocoa powder, baking powder, and salt, stirring until just combined.
- If desired, fold in the dark chocolate chips.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 25-30 minutes, until the edges are set but the center remains slightly soft.
- Let cool completely in the pan on a wire rack. Cut into squares and drizzle with melted chocolate if desired.
Notes
If the batter is too thick to spread, let it rest for 5 minutes. Store in an airtight container at room temperature for up to 2 days, or in the fridge for up to 5-7 days.
