- 1 cup plain Greek yogurt
- 2 large eggs
- 1/2 cup honey or maple syrup (or 1/3 cup coconut sugar)
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a mixing bowl, whisk together Greek yogurt, eggs, honey (or maple syrup), and vanilla extract until smooth.
- Add cocoa powder, baking powder, and salt, mixing until fully combined.
- Fold in chocolate chips if using.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake for 25–30 minutes until the edges are set and a toothpick comes out with a few moist crumbs.
- Let cool completely in the pan before slicing into squares.
- Optionally, drizzle melted dark chocolate on top before serving.
