Ingredients
6 medium apples (firm, crisp variety like Golden Delicious, Pink Lady, or Honeycrisp)
2 large eggs
¼ cup ( 50 g ) granulated sugar
2 tbsp brown sugar
½ cup ( 60 g ) all-purpose flour
½ tsp baking powder
½ cup ( 120 ml) whole milk
2 tbsp unsalted butter, melted
1 tsp vanilla extract
Pinch of salt
2 tbsp sliced almonds (for topping)
Powdered sugar (for dusting)

Instructions
Peel, core, and slice apples very thinly (use a mandoline if possible) and set aside in a large bowl.
In another bowl, whisk eggs with both sugars until light and fluffy.
Add melted butter, milk, and vanilla. Mix well.
Sift in flour, baking powder, and salt. Whisk until smooth.
Gently fold apple slices into the batter until all slices are coated. The batter will be thin, and apples should be layered with just enough batter to bind.
Preheat oven to 350°F (175°C) and grease and line a loaf pan or square pan with parchment paper.
Pour apple mixture into the pan, pressing lightly to arrange apples in neat layers.
Sprinkle sliced almonds on top.
Bake for 45-50 minutes, or until golden brown and set.
Let cake cool completely before slicing, as this helps it hold together. Dust with powdered sugar before serving.
