Instructions
Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish. Slice the sweet rolls horizontally through the middle and set aside the top section.
Melt 3 tablespoons of unsalted butter in a skillet over medium-low heat. Add onions, thyme, salt, and pepper. Cook for 20–25 minutes until caramelized.
Melt 1/2 cup of unsalted butter for the topping.
Assemble sliders by layering provolone, roast beef, caramelized onions, and remaining provolone on the bottom half of the rolls, then place the top back on.
Brush the sliders with melted butter, cover with foil, and bake for 15 minutes.
Remove the foil and bake for an additional 5–10 minutes until golden brown and bubbly. Let rest for 5 minutes before slicing.
Prepare au jus by combining gravy mix, onion soup mix, and water in a saucepan. Bring to a gentle boil, then simmer for 5–10 minutes.
Slice the sliders and serve with hot au jus for dipping, garnished with fresh parsley if desired.
