Description

A bright, airy lemon mousse that tastes like sunshine in a glass, perfect for warm-weather entertaining.


Ingredients

  • 1 cup granulated sugar
  • 1 tablespoon fresh lemon zest
  • Dash of salt
  • 4 large eggs
  • 1/2 cup freshly squeezed lemon juice (about 4 lemons)
  • 3 large eggs, separated
  • 1 cup plus 2 tablespoons granulated sugar
  • 2 teaspoons lemon zest
  • 1/2 cup freshly squeezed lemon juice (about 4 lemons)
  • Salt, a pinch
  • 1 cup heavy whipping cream
  • 1/2 cup homemade lemon curd, room temperature
  • 1 cup heavy whipping cream, cold
  • 1/3 cup powdered sugar
  • 1/2 teaspoon pure vanilla extract

Instructions

  1. In a bowl, cream butter and sugar until light and fluffy.
  2. Add lemon zest and salt, mixing well.
  3. Beat in whole eggs and lemon juice until combined.
  4. In a separate bowl, whip egg whites until soft peaks form.
  5. Gently fold egg whites into the lemon mixture.
  6. In another bowl, whip heavy cream until medium peaks form.
  7. Fold whipped cream into the lemon mixture.
  8. Spoon into serving glasses and chill for at least 4 hours.

Notes

For a sweeter mousse, substitute half of the lemon juice with fresh orange juice and add a teaspoon of orange zest.
