- 1 stick unsalted butter, room temperature
- 1 cup granulated sugar
- 1 tablespoon fresh lemon zest
- Dash of salt
- 4 large eggs
- 1/2 cup freshly squeezed lemon juice (about 4 lemons)
- 3 large eggs, separated
- 1 cup plus 2 tablespoons granulated sugar
- 2 teaspoons lemon zest
- 1/2 cup freshly squeezed lemon juice (about 4 lemons)
- Salt, a pinch
- 1 cup heavy whipping cream
- 1/2 cup homemade lemon curd, room temperature
- 1 cup heavy whipping cream, cold
- 1/3 cup powdered sugar
- 1/2 teaspoon pure vanilla extract
Instructions
- In a bowl, cream butter and sugar until light and fluffy.
- Add lemon zest and salt, mixing well.
- Beat in whole eggs and lemon juice until combined.
- In a separate bowl, whip egg whites until soft peaks form.
- Gently fold egg whites into the lemon mixture.
- In another bowl, whip heavy cream until medium peaks form.
- Fold whipped cream into the lemon mixture.
- Spoon into serving glasses and chill for at least 4 hours.
Notes
For a sweeter mousse, substitute half of the lemon juice with fresh orange juice and add a teaspoon of orange zest.
