Description
Delicious fresh peach fritters, crispy on the outside and tender with fruity peach chunks on the inside, topped with a glossy vanilla glaze.

- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 cup granulated sugar
- 1 large egg
- 1 cup milk
- 2 cups chopped fresh peaches
- Oil for frying
- 1 cup powdered sugar
- 2 tablespoons milk (for glaze)
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, mix together flour, baking powder, salt, cinnamon, and sugar.
- In another bowl, whisk together egg and milk. Add wet ingredients to the dry ingredients and stir until just combined.
- Gently fold in the chopped peaches.
- Heat oil in a deep pan over medium heat.
- Drop spoonfuls of batter into the hot oil and fry until golden brown on all sides, about 3-4 minutes.
- Remove fritters and place on a paper towel to drain excess oil.
- For the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle over warm fritters and serve.
Notes
Use ripe but firm peaches to ensure the pieces hold their shape while frying. Monitor the frying oil temperature for the best results.
