  • 1 cup shredded cheddar cheese
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/3 cup finely chopped red onion
  • 1 cup mayonnaise (or half mayo, half sour cream)
  • 2 cups crushed Fritos (original flavor)
  • Optional: jalapeños, cilantro, lime juice, black beans

Instructions

  1. Prep your veggies – dice peppers and onion finely.
  2. Combine corn, cheese, and veggies in a large bowl.
  3. Add the mayo (or mayo/sour cream combo) and stir well to coat.
  4. Optional flavor upgrades: stir in jalapeños, black beans, or chopped cilantro.
  5. Just before serving, mix in the crushed Fritos to keep them crunchy.
  6. Serve chilled or immediately for the best texture and taste.

Notes

For extra flavor, add a squeeze of fresh lime juice or a pinch of chili powder. Store the salad base separately from the Fritos if prepping ahead.
