- 1 cup shredded cheddar cheese
- 1/2 cup diced red bell pepper
- 1/2 cup diced green bell pepper
- 1/3 cup finely chopped red onion
- 1 cup mayonnaise (or half mayo, half sour cream)
- 2 cups crushed Fritos (original flavor)
- Optional: jalapeños, cilantro, lime juice, black beans
Instructions
- Prep your veggies – dice peppers and onion finely.
- Combine corn, cheese, and veggies in a large bowl.
- Add the mayo (or mayo/sour cream combo) and stir well to coat.
- Optional flavor upgrades: stir in jalapeños, black beans, or chopped cilantro.
- Just before serving, mix in the crushed Fritos to keep them crunchy.
- Serve chilled or immediately for the best texture and taste.
Notes
For extra flavor, add a squeeze of fresh lime juice or a pinch of chili powder. Store the salad base separately from the Fritos if prepping ahead.
