A creamy, crunchy corn salad made with sweet corn, zesty lime dressing, and Fritos for irresistible texture—perfect for potlucks and summer gatherings.

- 5 cups corn kernels (fresh, canned, or thawed frozen)
- 4 cups Fritos corn chips (1 cup reserved for garnish)
- 1 cup shredded cheddar cheese
- 1/2 cup diced red bell peppers
- 1/4 cup diced red onions
- 1–2 tablespoons chopped jalapeños (optional)
- 2 tablespoons chopped cilantro
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon taco seasoning
- Zest and juice of 1 lime
- Salt to taste
Instructions
- Prep corn by cooking and cutting from cob (if using fresh), or drain canned/frozen corn.
- Chop peppers, onions, jalapeños, and cilantro.
- In a large bowl, combine corn, cheese, bell peppers, onions, jalapeños, and cilantro.
- In a separate bowl, whisk together mayonnaise, sour cream, lime juice, zest, and taco seasoning.
- Pour dressing over the corn mixture and stir until evenly coated.
- Fold in 3 cups of crushed Fritos just before serving.
- Garnish with remaining Fritos and cilantro on top.
Notes
Best served immediately after mixing in Fritos to preserve crunch. Adjust jalapeños based on heat preference.
