Ingredients

- 2 cans (15 oz each) of sweet corn, drained
- 1 cup shredded cheddar cheese
- 1/2 cup chopped red or green bell pepper
- 1/4 cup diced red onion
- 1/2 cup mayonnaise or sour cream
- 1 bag (9.25 oz) of Fritos corn chips, slightly crushed
- Salt and pepper to taste
- Optional Add-ins: Jalapeños, Cilantro, Bacon bits, Black beans, Green onions
Instructions
- In a large mixing bowl, combine drained corn, chopped bell peppers, red onion, and shredded cheddar cheese.
- Add mayonnaise or sour cream and mix until evenly coated.
- Just before serving, gently fold in crushed Fritos to retain their crunch.
- Garnish with optional ingredients like cilantro, jalapeños, or green onions.
Notes
To keep Fritos crispy, fold them in right before serving. For added heat, include diced jalapeños. Bacon bits add a savory twist.
