Description
A hearty, cheesy skillet meal made with seasoned ground meat, sautéed cabbage, and crunchy Fritos. A comforting one-pan dinner with Tex-Mex flavor and plenty of texture.

- 1 lb ground beef or ground sausage
- ½ head of green cabbage, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (10 oz) diced tomatoes or Rotel
- 1–2 cups shredded cheese (cheddar, pepper jack, or Mexican blend)
- 2–3 cups Fritos corn chips
- 1 tablespoon taco seasoning
- Salt and pepper to taste
- Optional Add-ins: Black beans, Jalapeños, Corn kernels, Chili powder
Instructions
- Brown the meat: In a large skillet, cook the ground beef or sausage over medium heat until fully browned.
- Sauté aromatics: Add diced onions and minced garlic. Sauté until fragrant (about 3 minutes).
- Add cabbage: Stir in chopped green cabbage. Cook until slightly wilted (5–7 minutes).
- Stir in tomatoes and seasoning: Add the diced tomatoes or Rotel, taco seasoning, salt, and pepper. Mix well.
- Top and melt: Sprinkle shredded cheese over the mixture, then layer with Fritos. Cover the skillet and reduce heat, letting the cheese melt and the chips soften slightly.
- Optional bake: Transfer the mixture to a baking dish, top with extra cheese and Fritos, and bake at 350°F for 10–15 minutes for a golden finish.
Notes
For extra flavor, add chili powder or black beans. This dish is great as-is, or served with sour cream and hot sauce on the side.
