Description

Ingredients

  • 1 lb ground beef or ground sausage
  • ½ head of green cabbage, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) diced tomatoes or Rotel
  • 12 cups shredded cheese (cheddar, pepper jack, or Mexican blend)
  • 23 cups Fritos corn chips
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Optional Add-ins: Black beans, Jalapeños, Corn kernels, Chili powder

Instructions

  1. Brown the meat: In a large skillet, cook the ground beef or sausage over medium heat until fully browned.
  2. Sauté aromatics: Add diced onions and minced garlic. Sauté until fragrant (about 3 minutes).
  3. Add cabbage: Stir in chopped green cabbage. Cook until slightly wilted (5–7 minutes).
  4. Stir in tomatoes and seasoning: Add the diced tomatoes or Rotel, taco seasoning, salt, and pepper. Mix well.
  5. Top and melt: Sprinkle shredded cheese over the mixture, then layer with Fritos. Cover the skillet and reduce heat, letting the cheese melt and the chips soften slightly.
  6. Optional bake: Transfer the mixture to a baking dish, top with extra cheese and Fritos, and bake at 350°F for 10–15 minutes for a golden finish.

Notes

For extra flavor, add chili powder or black beans. This dish is great as-is, or served with sour cream and hot sauce on the side.
