Description

  • 1 packet taco seasoning
  • 810 cups chopped romaine or iceberg lettuce
  • 1 can black or pinto beans, drained
  • 1 cup corn (fresh, canned, or frozen)
  • 2 tomatoes, chopped
  • 1.5 cups shredded cheese (cheddar or Mexican blend)
  • 2 cups Fritos corn chips
  • ½ cup Catalina or French dressing
  • Optional: chopped green onions, black olives, avocado, jalapeños

Instructions

  1. Cook the Meat: In a skillet over medium heat, brown the ground beef. Drain excess fat. Add taco seasoning with a bit of water and simmer for 5 minutes.
  2. Prep the Base: In a large bowl, combine lettuce, tomatoes, corn, beans, and shredded cheese.
  3. Assemble the Salad: Add the seasoned meat. Toss with French dressing until well coated.
  4. Add Crunch & Garnish: Right before serving, mix in Fritos corn chips and top with any desired garnishes (onions, olives, etc.).

Notes

For a vegetarian version, omit the meat or use a plant-based ground alternative.
