Description

This colorful Fritos corn salad is a creamy, crunchy, crowd-pleasing dish made with corn, bell peppers, cheddar cheese, and crushed Fritos. Great as a side dish or party dip — and endlessly customizable!

  • 2 cans corn (drained) or equivalent fresh/thawed frozen corn
  • 1 cup red and green bell peppers, diced
  • ½ cup red onion, finely chopped
  • 1½ cups shredded cheddar cheese
  • ¾ cup mayonnaise (or to taste; substitute with Greek yogurt if preferred)
  • 1 small jalapeño, finely chopped (optional)
  • 2 cups Fritos corn chips, crushed (Chili Cheese Fritos for extra flavor)
  • Optional Add-ins:
  • Black beans
  • Diced avocado
  • Chopped cilantro
  • Taco seasoning

Instructions

  1. In a large bowl, combine corn, diced bell peppers, red onion, shredded cheddar, and mayonnaise (or Greek yogurt).
  2. Mix thoroughly until everything is evenly coated. Add jalapeño if using.
  3. Chill the mixture in the fridge for at least 30 minutes to allow flavors to meld.
  4. Just before serving, gently stir in crushed Fritos (or serve them on the side for maximum crunch).
  5. Serve cold — enjoy as a side dish or scoop with Fritos Scoops as a dip.

Notes

For added flavor, mix in taco seasoning or a squeeze of lime. Keep Fritos separate until serving if making ahead to preserve crunch. Add avocado or black beans for more texture.
