Description
This colorful Fritos corn salad is a creamy, crunchy, crowd-pleasing dish made with corn, bell peppers, cheddar cheese, and crushed Fritos. Great as a side dish or party dip — and endlessly customizable!

- 2 cans corn (drained) or equivalent fresh/thawed frozen corn
- 1 cup red and green bell peppers, diced
- ½ cup red onion, finely chopped
- 1½ cups shredded cheddar cheese
- ¾ cup mayonnaise (or to taste; substitute with Greek yogurt if preferred)
- 1 small jalapeño, finely chopped (optional)
- 2 cups Fritos corn chips, crushed (Chili Cheese Fritos for extra flavor)
- Optional Add-ins:
- Black beans
- Diced avocado
- Chopped cilantro
- Taco seasoning
Instructions
- In a large bowl, combine corn, diced bell peppers, red onion, shredded cheddar, and mayonnaise (or Greek yogurt).
- Mix thoroughly until everything is evenly coated. Add jalapeño if using.
- Chill the mixture in the fridge for at least 30 minutes to allow flavors to meld.
- Just before serving, gently stir in crushed Fritos (or serve them on the side for maximum crunch).
- Serve cold — enjoy as a side dish or scoop with Fritos Scoops as a dip.
Notes
For added flavor, mix in taco seasoning or a squeeze of lime. Keep Fritos separate until serving if making ahead to preserve crunch. Add avocado or black beans for more texture.
