  • Author: Elsa
  • Total Time: 45 minutes
  • Yield: 6 servings 1x

Description

This hearty Fritos cabbage beef casserole combines ground beef, tender cabbage, seasoned tomatoes, melty cheddar cheese, and a crunchy Fritos topping. A flavorful, budget-friendly dinner with a Tex-Mex twist.

Ingredients

Scale
  • 1 pound ground beef
  • ½ head green cabbage, chopped
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes or tomato sauce
  • 1 cup shredded cheddar cheese
  • 12 cups Fritos corn chips
  • Spices: paprika, black pepper, chili flakes, salt (to taste)
  • Optional: green onions, jalapeños for garnish

Instructions

  1. Cook the Meat: In a large skillet over medium heat, brown the ground beef. Add chopped onion and minced garlic and sauté until soft and fragrant, about 5 minutes.
  2. Add Cabbage: Stir in chopped cabbage and cook until softened, about 8–10 minutes.
  3. Add Tomatoes and Seasonings: Pour in diced tomatoes or tomato sauce. Season with paprika, chili flakes, black pepper, and salt. Simmer briefly to combine flavors.
  4. Layer and Bake: Transfer the beef and cabbage mixture to a greased casserole dish. Top with shredded cheddar cheese and a generous layer of Fritos corn chips.
  5. Bake: Bake at 375°F (190°C) for 15 minutes, or until the cheese is bubbly and the Fritos are golden and crisp.
  6. Serve: Garnish with sliced green onions or jalapeños if desired. Serve hot.

Notes

You can use tomato sauce for a smoother texture or diced tomatoes for chunkiness. For extra richness, stir in a dollop of sour cream before baking or top with avocado after baking.
