Description

A whimsical fusion of flavors that combines the rich, velvety goodness of cheesecake with the nostalgic crunch of Fruity Pebbles, all wrapped in a delightful taco shell.

Ingredients

Scale
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup Fruity Pebbles cereal, plus extra for garnish
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Whipped cream
  • Chocolate sauce
  • Extra Fruity Pebbles for garnish

Instructions

  1. Prepare the Cheesecake Filling: In a large mixing bowl, add the softened cream cheese and beat until creamy. Gradually add the powdered sugar while mixing, scraping down the sides as necessary.
  2. Mix in the vanilla extract. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture in batches, then fold in the Fruity Pebbles cereal. Cover and refrigerate.
  3. Create the Taco Shells: In a medium bowl, whisk together the flour, sugar, and salt. In another bowl, whisk together the melted butter, milk, egg, and vanilla. Pour the wet into the dry ingredients and mix until just combined.
  4. Cook the Shells: Heat a non-stick skillet over medium heat. Ladle about 1/4 cup of batter into the skillet and cook for 2-3 minutes until set. Flip and cook for 1-2 minutes more. Transfer to a plate.
  5. Shape the Taco Shells: Place taco shells in a small bowl or taco holder to cool.
  6. Assemble and Serve: Fill each taco shell with cheesecake filling using a piping bag. Top with whipped cream, drizzle chocolate sauce, and sprinkle extra Fruity Pebbles on top.

Notes

Ensure cream cheese is softened before mixing for a smoother blend. You can also experiment with different cereals for variations.
