Ingredients

  • 1 pound lean ground turkey
  • 1 medium head of cauliflower, cut into small florets
  • 3 tablespoons unsalted butter
  • 4 cloves fresh garlic, minced
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • A pinch of red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Lemon wedges, for serving

Instructions

  1. Cut the cauliflower into bite-sized florets, rinse and pat dry. Mince garlic and chop parsley.
  2. Heat a skillet over medium-high and melt 1 tablespoon of butter. Add cauliflower, season, and cook until golden-brown (4–5 minutes), toss and cook until tender-crisp (5–7 minutes). Transfer to a plate.
  3. In the same skillet, add another tablespoon of butter if necessary, add ground turkey, season, and cook until fully browned (7–10 minutes).
  4. Stir in minced garlic and cook for 1 minute until fragrant.
  5. Return cauliflower to the skillet, combine, and let simmer for 3–5 minutes.
  6. Remove from heat, add remaining butter and Parmesan, stir gently until melted and creamy. Adjust seasoning and stir in parsley.
  7. Serve garnished with parsley and lemon wedges.

Notes

Pat cauliflower dry before cooking to ensure proper browning. For a crunchy texture, reserve some cauliflower to roast separately.
