- 2 large boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 1 pound pasta (fettuccine, spaghetti, or penne)
- 6 quarts water
- 2 tablespoons salt
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1/2 cup grated Parmesan cheese, plus more for serving
- 1/4 cup chicken broth
- 1/4 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Pat the chicken breasts dry with paper towels, then season both sides with garlic powder, onion powder, oregano, red pepper flakes, salt, and pepper.
- In a large skillet over medium-high heat, heat olive oil and sear the chicken for 5–7 minutes per side until cooked through. Remove from skillet and let rest before slicing.
- Boil 6 quarts of water with 2 tablespoons salt, cook the pasta until al dente, reserving 1 cup of cooking water before draining.
- In the same skillet, melt butter over medium heat, add minced garlic and cook until fragrant. Pour in heavy cream and chicken broth, bringing to a gentle simmer.
- Stir in grated Parmesan, salt, and pepper. Simmer until thickened, adding reserved pasta water if necessary.
- Add pasta and sliced chicken to the sauce, tossing gently to combine. Adjust seasoning and garnish with parsley before serving.
Notes
For a lighter option, use half-and-half instead of heavy cream. The dish can be stored in the refrigerator for 3–4 days or frozen for up to 2 months.
