  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 1 pound pasta (fettuccine, spaghetti, or penne)
  • 6 quarts water
  • 2 tablespoons salt
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup chicken broth
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Pat the chicken breasts dry with paper towels, then season both sides with garlic powder, onion powder, oregano, red pepper flakes, salt, and pepper.
  2. In a large skillet over medium-high heat, heat olive oil and sear the chicken for 5–7 minutes per side until cooked through. Remove from skillet and let rest before slicing.
  3. Boil 6 quarts of water with 2 tablespoons salt, cook the pasta until al dente, reserving 1 cup of cooking water before draining.
  4. In the same skillet, melt butter over medium heat, add minced garlic and cook until fragrant. Pour in heavy cream and chicken broth, bringing to a gentle simmer.
  5. Stir in grated Parmesan, salt, and pepper. Simmer until thickened, adding reserved pasta water if necessary.
  6. Add pasta and sliced chicken to the sauce, tossing gently to combine. Adjust seasoning and garnish with parsley before serving.

Notes

For a lighter option, use half-and-half instead of heavy cream. The dish can be stored in the refrigerator for 3–4 days or frozen for up to 2 months.
