Description
A rich and flavorful garlic Parmesan chicken and potatoes dish, easily made in the Crockpot or Instant Pot for a comforting one-pot family meal.
Ingredients

- 2 lbs boneless, skinless chicken breasts or thighs, cut into chunks
- 1.5 lbs red or yellow potatoes, chopped into even pieces
- ½ cup grated Parmesan cheese
- ¾ cup shredded Parmesan cheese
- 3–4 cloves fresh garlic, minced
- 1 tbsp garlic powder
- 1 tbsp Italian seasoning
- 1 tbsp extra-virgin olive oil
- Salt and pepper to taste
- ¾ cup chicken broth (for Instant Pot only)
Instructions
- Crockpot Method: Add all ingredients except shredded Parmesan into the crockpot. Stir to mix well. Cook on LOW for 4–6 hours or HIGH for 2–3 hours. In the last 10–15 minutes, sprinkle shredded Parmesan on top and let sit with the lid on until cheese melts.
- Instant Pot Method: Pour chicken broth into the pot. In a bowl, mix the rest of the ingredients except shredded Parmesan, and layer them over the broth. Seal and pressure cook on HIGH for 10 minutes. Quick release, then add shredded Parmesan and let sit until melted.
Notes
For a golden top, place under the broiler for a few minutes after cooking. Garnish with fresh parsley if desired.
