Description

A hearty dish featuring tender chicken, flavorful potatoes, and rich cheese, perfect for busy days.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Wash and halve the baby potatoes and mince the garlic cloves.
  2. Rub chicken breasts with olive oil, Italian seasoning, salt, black pepper, and red pepper flakes.
  3. Layer the halved potatoes at the bottom of the crockpot and place the seasoned chicken on top.
  4. Pour the chicken broth over the mixture.
  5. Sprinkle the minced garlic and grated parmesan cheese over the chicken.
  6. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  7. Check that the chicken reaches an internal temperature of 165°F (75°C) and that the potatoes are fork-tender.
  8. Remove chicken and potatoes, and spoon remaining sauce over them before serving.
  9. Garnish with chopped parsley if desired.

Notes

This dish can be served with a side salad or crusty bread. Leftovers can be stored in an airtight container for 3-4 days in the fridge or frozen for up to 3 months.
