Ingredients
1 red bell pepper
1 yellow bell pepper
1 zucchini
8 oz mushrooms
1 small red onion
1 tbsp olive oil
¼ cup soy sauce or tamari
2 tbsp honey or maple syrup
1 tbsp rice vinegar
1 tbsp sesame oil
1 clove garlic, minced
1 tsp grated ginger
1 tsp cornstarch + 2 tsp water
Sesame seeds and chopped green onions for garnish

Instructions
Gather all the ingredients for the skewers.
Prepare the teriyaki sauce by combining soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger in a saucepan. Simmer for 5–7 minutes.
Mix cornstarch with water to create a slurry, then add to the sauce and cook until thickened.
Chop the veggies, toss them in olive oil and half of the teriyaki sauce, and marinate for at least 15 minutes.
Skewer the marinated vegetables, alternating for presentation.
Preheat the grill to medium-high heat and grill the skewers for 10–12 minutes, brushing with additional sauce as needed.
Garnish with sesame seeds and green onions before serving.
