Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1 cup eggnog
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar for glaze
  • 2 tablespoons milk for glaze
  • 1/2 teaspoon vanilla extract for glaze

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, spices, and salt.
  3. In another bowl, cream the butter and brown sugar until fluffy. Add eggs, beating well after each addition. Mix in eggnog and vanilla.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the loaf cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  8. For the glaze, whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over the cooled loaf before serving.
