Description

Delightful bite-sized cupcakes inspired by gingerbread houses, perfect for holiday celebrations.


Ingredients

  • ½ cup unsalted butter, softened
  • ½ cup packed brown sugar
  • 1 large egg
  • ½ cup molasses
  • ½ cup hot water
  • ¼ cup whole milk
  • 1 cup unsalted butter, softened (for frosting)
  • 3 ½ cups powdered sugar, sifted
  • 23 tbsp heavy cream or milk
  • 1 tsp vanilla extract
  • Mini gingerbread house cookies
  • Red, green, and white pearl sprinkles
  • Optional: sanding sugar or nonpareils

Instructions

  1. Gather all necessary ingredients.
  2. Preheat the oven to 350°F (175°C).
  3. Line muffin tin with cupcake liners.
  4. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cloves.
  5. Cream the softened butter and brown sugar until light and fluffy.
  6. Add the egg and molasses, mixing until smooth.
  7. Gradually combine the dry mixture with milk and hot water, mixing until just combined.
  8. Fill cupcake liners two-thirds full.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Cool cupcakes in the tin for a few minutes, then transfer to a wire rack to cool completely.
  11. For frosting, beat softened butter until creamy, then add powdered sugar gradually, mixing until fluffy. Add vanilla extract and cream/milk as needed.
  12. Once cooled, pipe frosting onto cupcakes.
  13. Decorate with mini gingerbread houses and festive sprinkles.

Notes

Store undecorated cupcakes at room temperature for up to 3 days; refrigerated frosted cupcakes last up to 4 days.
