This gingerbread loaf is a one-pan wonder that’s cozy, spicy, and perfect for dunking in coffee.
Ingredients

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 2 eggs
- 1/2 cup molasses
- 1/2 cup hot water
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together the flour, baking soda, spices, and salt.
- In another bowl, cream the butter and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each.
- Stir in the molasses until well combined.
- Gradually add the dry ingredients to the wet ingredients, alternating with the hot water, until combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, until a toothpick inserted into the center comes out clean.
- Allow to cool before glazing with additional molasses if desired.

Wrap tightly to keep fresh for several days or freeze for up to 3 months.
